Abstract
Hygiene is a basic fondation for a preventive oenology ; it garantees the producer for the security of the quality of his wines. Many measures are to be taken : the choice of a suitable system of cleaning and disinfection.
After studying the areas to be treated and the processes to be carried out, the tests of choice are related for the different cleaning and disinfection agents.
