Utilisation d'un vinificateur à remontage automatique pour l'élaboration des vins rouges

Abstract

We give the results of tests of fermentation on skins conducted in a parallel direction, by the traditional technique of tanks with automatic and supervised pumping over. The tests were conducted with differents varieties of vine, during the vintages of the years 1978, 1979, 1980.

The author underlines the advantage of the technique tested on the dissolution of the colour, and its stability in time.
