Essai d'un appareil de traitement des vins par le froid en continu (système Crystal-Flow, Alfa-Laval)

Abstract

Trials concerning stabilization of the wine against tartaric precipitations using a continuons cooling equipment (Alfa-Laval - Crystal-Flow) are described. Operating conditions about mechanical and thermic aspects are correct and consequences are a large decrease of solubilized potassium bitartrate elements. Treated wines are stable when cooled and have no undesirable further evolution.
