Prévention des précipitations tartriques dans les vins au moyen du traitement en continu par le froid

Abstract

The use of an equipment of continuons treatment of wine VINIPAL and GASQUET leads to a stabilization of potassium bitartrate. This resuit is identical to this obtained by usual low temperature storage if the following conditions are respected :

(1) Use of wines prefiltered with kieselguhr

(2) Recycling of the wine at the beginning of the treatment. An addition of a low level of potassium bitartrate crystals (0,3 g/hl) in the crystalizer givers interesting results.
