Abstract
Dans ce travail on étudie l'activité de suspensions bactériennes responsables de la fermentation malolactique des vins, on décrit les méthodes de purification d'extraits bactériens catalysant cette transformation. On a vérifié l'existence d'une enzyme malolactique particulière assurant la transformation du malate en lactate sans intervention des lacticodéshydrogénases.

The activity of bacterial suspensions responsible for malolactic fermentation in wines was studied. Methods of purification of bacterial extracts which catalyse this transformation are described. The existence of a particular malolactic enzyme which ensures the conversion of malate into lactate without the intervention of lactate dehydrogenases was shown.
